This will make two pies, so even if I’m making regular pizza for the kids, the adults can enjoy something more wholesome (but your kids might not mind this version too because it’s actually good!). Watch 4 Amazing Things to Bake with Spelt Flour.
3 and 1/2 cups Shibolim Extra Fine Whole Spelt Flour, divided
1 and 1/4 cups warm water
2 and 1/4 teaspoons Gefen Dry Yeast or 1 packet other dry yeast
1 tablespoon sugar
1 tablespoon salt
2 tablespoons Gefen Olive Oil
In the bowl of a mixer (you can also mix by hand in a regular bowl), combine one cup flour, water, yeast, and sugar. Let stand until mixture bubbles.
Add remaining flour, salt, and olive oil. Knead until a smooth dough forms. Place in a greased bowl, cover, and let rise for one and a half hours.
Preheat oven to 450 degrees Fahrenheit. Divide dough in half, and roll on a piece of Gefen Parchment Paper into a circle (if you have a baking stone) or rectangle (if baking on a baking sheet). Transfer to baking sheet, top as desired, and bake for 10–12 minutes, until cheese is golden and bubbling.
