Spaghetti Squash Salad

Ingredients

Main ingredients

  • 1 large spaghetti squash

  • 1/4 cup water

  • 1/3 cup kosher for Passover vinegar

  • 1 carrot, grated

  • 1 pepper, diced

  • 1 small onion, diced

  • 1–2 pickles, sliced

  • 1/2 cup sugar

  • 1/2 teaspoon salt

  • 4–6 tablespoons Gefen Mayonnaise

  • 1/4 cup pickle juice

Directions

Prepare the Salad

1.

Cut squash in half. Scoop out seeds. Bake for 45 minutes at 350 degrees Fahrenheit. Can be cooked in water until tender. Remove strands with fork to resemble spaghetti.

2.

Combine all ingredients. Mix well. Serve chilled.

Variation:

During the year, pasta can be used instead of spaghetti squash.
