Ingredients

Southwestern Pasta Salad

  • 1 teaspoon garlic powder

  • 1 (15-ounce) can corn, drained

  • 2 teaspoons oil

  • 1/2 pint cherry tomatoes, halved

  • 1/2 red onion, minced

  • 1 (15-ounce) can red beans, drained

Directions

1.

In a jar, mix mayonnaise, vinegar, and spices.

2.

Toss corn with the oil and spread on a baking sheet. Bake at 350 degrees Fahrenheit for 40 minutes or until roasted.

3.

In a large salad bowl, combine all ingredients.

4.

Serve cool or at room temperature.

the roasted corn gives it such a good flavor! the dressing is just right. not too heavy. i left out the beans bec my family doesn’t like them
