Fun Fact: While the pods of regular peas can’t be eaten, sugar snap peas and snow peas have been specially bred with less fibrous pods, producing a vegetable that’s edible in its entirety. Eat them quickly after picking! All varieties of peas are at peak sweetness when they’re picked, growing starchier and less sweet as time passes.
8 ounces Romaine lettuce
2 cups sugar snap peas, ends trimmed
2 carrots, julienned
4 medium radishes, thinly sliced
1/8 medium red onion, thinly sliced into 1/4-size rings
1/4 cup walnuts
1/4 cup orange juice
3 tablespoons brown sugar
1 teaspoon Gefen Garlic Powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon Kedem Red Wine Vinegar
1/4 cup oil
In a large bowl, combine all salad ingredients.
Blend together dressing ingredients. Toss with salad and enjoy.
