6 small potatoes
1 small sweet potato (cubed)
1 tablespoon margarine
shredded cheese (per taste)
salt, to taste
pepper, to taste
oil, for frying
Pierce the potatoes and place in a microwave safe bowl.
Cook the potatoes in the microwave.
While the potatoes are cooking, cut the sweet potato into small squares.
When the potatoes are cooked, rinse under cold water and peel.
Place potatoes in a Ziploc bag.
Add one tablespoon margarine, sprinkle salt and pepper, and shredded cheese.
Smash the potatoes using your hand or a rolling pin.
In the meantime (with your parent’s help), heat the oil in a frying pan.
Form potato and cheese mixture into patties.
Place a patty on spatula and add cubed sweet potato on top.
Fry for a few minutes per side, or until sweet potato is cooked.
Remove from frying pan.
Enjoy with sour cream or apple sauce or plain, but just enjoy. Happy Chanukah! (and remember to leave some oil for the menorah!)
