This is not your typical pulled beef! Beef barbacoa is a Mexican dish with lots of deep flavors. It’s sure to be enjoyed by everyone.
1 onion, diced
3 pounds chuck roast
1 clove garlic, minced or 1 cube Gefen Frozen Garlic
2 bay leaves
1/4 cup lime juice
1 cup beef stock, such as Manischewitz Beef Broth (or 1 tablespoon beef soup mix plus 1 cup water)
3 tablespoons Tuscanini Red Cooking Wine or other red wine
2 chipotle chili peppers with the sauce
1 tablespoon chili powder
1 tablespoon cumin
2 teaspoons smoked paprika
salt, to taste
pepper, to taste
limes, for garnish
red onion, for garnish
radish, for garnish
parsley, for garnish
Place all ingredients in a slow cooker and cook on low for six to eight hours.
Using two forks, shred the meat directly in the slow cooker. Cook for an additional hour.
Garnish and serve with wraps, mashed potatoes, or rice.
