1 cup plain or vanilla Greek yogurt
6 tablespoons Gefen Almond Flour
6 tablespoons Gefen Tapioca Starch
4 egg whites or 3/4 cup Haddar Egg Whites
1 teaspoon vanilla
1/2 teaspoon baking soda
1 teaspoon baking powder
non-stick cooking spray or butter, for greasing pan
In a bowl, add yogurt, almond flour, tapioca starch, egg, vanilla, baking soda, and baking powder. Mix until fully combined.
Grease a pancake pan or skillet with nonstick cooking spray or melted butter. Heat over medium-high heat. Scoop a scant quarter-cup of batter to form each pancake.
Cook until bubbles appear at the top and edges seem firm, about 90 seconds. Flip and cook for an additional one minute, until golden. Enjoy immediately with your favorite pancake toppings.
Yields 10 pancakes.

Yes, you can put corn starch or flour instead.
Ingredient Hi what’s tapioca starch?
Tapioca starch is an amazing alternative to flour Naomi. They make a Kosher for Pesach version. I bought mine in Gourmet Glatt in Cedarhurst. It’s made from cassava root. They actually use it a lot in South America.
