Simple Grilled Veggies

  • Carrots

  • Zucchinis

  • Peppers

  • Parsnips

  • Onions

  • Whatever other vegetables you like:)

  • Olive oil

  • Salt

  • Black Pepper

Chop vegetables into sticks or rounds. Toss with olive oil, salt, and black pepper. Spread out in a single layer on a sheet pan. Broil on high for four minutes, then flip the veggies and broil for another four minutes.

I find that these are delicious hot and at room temperature, so feel free to refrigerate and serve later.
