Delicious and exotic fresh salad with greens, avocado, mango, cucumber, and candied almonds.

Ingredients

Dressing

  • 1/3 to 1/2 cup Gefen Canola Oil

  • 1/3 cup cider or white vinegar

  • 1/2 teaspoon garlic salt

  • 2 tablespoons sugar

Salad

  • 4 cups lettuce (I love baby spinach or red leaf lettuce)

  • 1 avocado, diced

  • 1 mango, diced (papaya – “paw paw” as it’s called in South Africa – works well too)

  • 1 cucumber, diced

  • 1/2 cup caramelized almonds

Directions

Assemble the Salad

1.

Blend dressing. 

2.

In a large bowl, combine salad ingredients. Add dressing before serving.
