One of my favorite side dishes in a long time! Roasted gnocchi makes it soft on the inside, crispy on the outside. So good! Watch 4 Amazing Things for more delicious ways to eat gnocchi!
1 (16-ounce) packageĀ Tuscanini Gnocchi
1 pepper, cut into strips
2 cups grape tomatoes
1/2 pound asparagus, tips and leaves trimmed, halved lengthwise
1/2 red onion, sliced
1/4 cup Gefen Olive Oil
6 cloves garlic, crushed or 6 cubes Gefen Frozen Garlic
1 teaspoon salt
Preheat oven to 400 degrees Fahrenheit.
Add everything except the asparagus to a greased baking sheet. Toss to combine.
Bake for 30 minutes. Add asparagus and bake an additional 10 minutes. The peppers will be soft and the tomatoes will release their juices, making the whole dish so flavorful when tossed together.
