Sheep or Goat Cheese Ziti

I use this method to prepare baked ziti for my entire family, some of whom are allergic to cow’s milk.

Ingredients

Ziti

  • approximately 750 grams whole wheat penne or ziti

  • 250 grams pasta sauce

  • 250-gram block sheep/goat feta (or feta-style) cheese in brine

  • broccoli or your favorite vegetable/s (optional)

Directions

1.

Boil salted water in a large pot. Add the noodles and cook until Al dente. Drain.

2.

Meanwhile, use an immersion blender to blend up the feta cheese with its brine.

3.

In a 9 x 13-inch baking dish, combine noodles, blended feta, pasta sauce, and veggie/s. Bake at 350 degrees Fahrenheit, covered, for 30 minutes.
