Because every meal needs a great salad. Give this classic dish a new look by shaving and curling the cucumbers for a stunning presentation. Clip and save this one—trust me.
9-12 small cucumbers, unpeeled
1/4 red onion, diced finely
1/2 cup Tonnelli Apple Cider Vinegar
1/4 cup plus 2 tablespoons olive oil
2 tablespoons Manischewitz Honey
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon Gefen Garlic Powder
1 tablespoon fresh dill, chopped, for garnish
Wash and dry cucumbers. Using a vegetable peeler, shave cucumbers into wide ribbons. Discard the first slice that is the peel. Add to a large bowl.
In a separate bowl, whisk red onion, vinegar, olive oil, honey, salt, pepper and garlic powder. Pour dressing over cucumbers and refrigerate for two hours to allow the flavors to meld.
When ready to serve, drain the juice.
Prepare 12 mini martini glasses on a platter and roll each cucumber ribbon to form a circle. Place into glasses one at a time until full. Sprinkle with dill and serve with mini plastic forks.
