sea bass in lemon garlic butter sauce
sea bass
1/2 c dry white wine
1/4 c heavy cream
2 tablespoons butter chilled
1 lemon, juice only
1 tsp mince garlic
1 tablespoon fresh dill
s&p
1/4 c minced shallots
in a small saucepan, add a drop oil and cook garlic and shallots on low heat until soft. add white wine, raise flame to medium and cook for 4 minutes
remove from heat, at butter, stir and then add cream. return to heat, and stir until it bubbles. remove from heat and add lemon and dill. add s&p to taste.
add sea bass to pan on medium heat, sear for 4 minutes covered. then basted for two minutes, and cover again in low flame let cook until done.
