Egg Mixture
6 eggs
1 cup milk
1/2 cup flour
1/2 tsp salt
1/4 black pepper
Vegetable Filling
1 onion diced
oil for sautéing
1 tomato
1 red pepper
Preheat oven to 450°.
Beat eggs and add milk. Add rest of ingredients and mix well. Pour egg mixture into a well-greased 9×13-inch baking pan.
Bake for 15 minutes.
In a skillet over medium flame, sauté onions in oil until translucent. Add tomatoes and peppers and continue sautéing for 7-10 minutes. Spread sautéed vegetables and cheese onto baked eggs. Roll up jelly-roll style and bake for an additional 3 minutes.
YIELD: 6-8 servings
