What happens when a frittata meets the best appetizer on the Chinese restaurant menu? A brunch treat that you won’t want to share! A Food Fight, Round 1 Recipe
1 (9-oz./225-g.) package Gefen Japanese-Style Noodles, cooked according to package instructions
1/4 cup finely diced scallions
1 large egg, beaten
1/4 teaspoon toasted sesame oil
3/4 teaspoon salt
canola oil, to cover bottom of pan
Mix scallions, egg, sesame oil, and salt together until thoroughly combined. Take one and a half cups of noodles and mix into the egg mixture. Set aside the rest for another pancake, should you choose to share with a friend.
Heat oil in an eight- or nine-inch cast-iron pan. (A regular frying pan is fine too.) Gently spread the noodle-egg mixture evenly in the pan and let cook over medium-high heat for two minutes. Lower heat and cook for another two minutes till crisp. Carefully flip and cook for three minutes on the other side. Cook until crisped to your liking.

freezer-friendly does this freeze well? and how should it be reheated?
Hi! I think it should freeze well. I would put it in a frying pan to heat up and crisp up after it defrosts from the freezer.
