Ingredients

Savory Stuffed Mushrooms

  • 12 portobello steak mushrooms

  • 1 red pepper, diced

  • 1 yellow pepper, diced

  • 1 onion, diced

  • 2 tablespoons oil

  • 8 Pesach crackers, such as Gefen Shehakol Matzo Crackers, crushed

Directions

Prepare the Savory Stuffed Mushrooms

1.

In a large skillet, heat oil. Lower flame and sauté vegetables for 10 minutes.

2.

Stir in crackers and spices and fry for three minutes.

3.

Grease a baking sheet.

4.

Remove stems from mushrooms and stuff with mixture. Place on baking sheet and bake uncovered for 20 minutes.

5.

Top with scallions prior to serving.
