The cracker is a great filler in this tasty dish.
12 portobello steak mushrooms
1 red pepper, diced
1 yellow pepper, diced
1 onion, diced
2 tablespoons oil
8 Pesach crackers, such as Gefen Shehakol Matzo Crackers, crushed
1 teaspoon salt
1 teaspoon Gefen Onion Powder
2 teaspoons Gefen Ketchup
scallions, sliced, for garnish
In a large skillet, heat oil. Lower flame and sauté vegetables for 10 minutes.
Stir in crackers and spices and fry for three minutes.
Grease a baking sheet.
Remove stems from mushrooms and stuff with mixture. Place on baking sheet and bake uncovered for 20 minutes.
Top with scallions prior to serving.
