1 lb gourmet flanken
salt, black pepper, paprika, and Montreal steak spice seasoning to taste
1-2 T olive oil
1 large spanish onion, quartered
6-7 whole cloves garlic, peeled
1/2 cup red wine
2 T tomato paste
1/2 cup chicken soup or water
1/2 tsp dried rosemary
1/2 cup freshly chopped Parsley
wash flanken and pat dry. season amd rub into meat
heat oil in 8 qt pot. sear meat on medium high flame, 2 pc at a time for 3-4 mins on each side. add rest of ingredients except for the parsley and sprinkle some additional Montreal seasonings
cover pot and bring to a boil. once boiling turn heat to low and braise meat for 6-8 hours. liquid should be simmering slightly. check on it to make sure liquid to make sure it isn’t evaporating
when done you can transfer to 9×13 in pan and keep warm till serving
