Fish fit for royalty!
4 salmon fillets, 1- and 1/2-inch slices
salt
1/3 cup molasses
1/4 cup Haddar Brown Sugar
1 tablespoon Glicks Soy Sauce
10–12 ounces fresh green beans, trimmed
1 yellow summer squash, cut into thin half circles
2 tablespoons mustard
2 teaspoons shredded lemon peel or 2 teaspoons lemon juice
2 tablespoons fresh, chopped parsley (optional)
pepper
Sprinkle salmon with salt and pepper; set aside.
Heat together molasses, sugar, and soy sauce until sugar is dissolved. Brush sauce over salmon and broil 10 to 15 minutes, brushing with more sauce when halfway baked.
Tear four 36- by 18-inch sheets of heavy-duty foil; fold in half to make 18-inch squares.
In a bowl, combine the green beans, squash, and mustard; sprinkle with salt and pepper. Divide vegetables evenly among the four pieces of foil, placing in centers. Top each square with a slice of salmon.
Fold together foil and seal with double fold, leaving room for steam to build. Broil for 20 minutes.
After transferring to plates, sprinkle each slice with lemon (and parsley, if desired).
