I love when a recipe comes out looking so pretty with very little effort! You can serve these next to quinoa salad, on a bed of greens, or even on their own.
Yield: 4 pinwheels
4 strips salmon, pinwheel cut (see note)
1/2 cup bottled honey-garlic sauce
3 scallions, sliced
1/4 cup crushed pistachios
Marinate salmon strips in sauce for 30 minutes.
Preheat oven to 350 degrees Fahrenheit. Roll up salmon and place on a baking sheet—you may need to secure with a toothpick. Sprinkle pinwheels with sliced scallions and crushed nuts. Bake for 25 minutes.
