If you love pasta, well now you’re about to love it even more! This penne pasta is tossed in a creamy marinara sauce with flaked salmon. It’s not only a complete meal, but it’s easy to prepare and absolutely delicious.
1 pound Gefen Penne Pasta
3 tablespoons olive oil
2 cubes Gefen Frozen Garlic or 2 minced cloves
4 salmon fillets, skin removed
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 jar Gefen Classic Marinara
1 handful finely chopped cleaned basil or 5 cubes Dorot Gardens Frozen Basil
3 to 4 cubes frozen chopped spinach (optional)
1/2 cup heavy cream
In a large pot, boil the pasta in salted water until al dente. Drain and set aside.
In the same pot on medium heat drizzle in the olive oil. Add in the garlic and cook just until fragrant. Shake the salt, pepper and garlic powder over the salmon fillets. Add the salmon into the pot and sear on both sides, about two minutes per side. Pour the jar of Gefen Classic Marinara over the salmon and add in the basil. (Optional: Add in some chopped spinach when adding in the marinara sauce.) Cover the pot and lower to a simmer. Allow to simmer 10 to 15 minutes or until the salmon is cooked and easily flakes with a fork.
Use a fork to gently break up all the salmon. Add in the heavy cream and gently mix. Once combined add in the cooked penne pasta and remove from the heat.
Garnish with more basil if desired.
Serve and enjoy!

Can the heavy cream be skipped? Any lighter or healthier alternative?
I’d suggest swapping out the heavy cream- wouldn’t skip it. Here are some alternatives you can try: Greek Yogurt, Coconut Cream, Tofu, Cashew Cream, Evaporated Milk, Soy Milk or oat milk! Let us know how it goes 🙂
Half and half or red milk might work. But dont skip it
