Light, easy, simple, and sophisticated, this is perfect for a fancier lunch or light supper.

Ingredients

Salmon Crunch Bowl

  • 4 salmon fillets, cubed

  • 1 bag shredded purple cabbage

  • 6 mini cucumbers, sliced

  • 5 radishes, sliced

  • 1/4 cup assorted seeds (sunflower, sesame, etc.)

Directions

1.

Preheat oven to 350 degrees Fahrenheit.

2.

In a bowl, mix sugar, lemon juice, and oil until smooth.

3.

Place salmon in a pan. Pour 1/4 of the dressing over salmon cubes.

Bake for 12 minutes.

5.

Place all salad ingredients in a bowl and toss with dressing.
