A great new twist on the melaveh malkah tradition of homemade pizza.   Yield: 2 9-inch pizzas

Ingredients

Roasted Vegetable Pizza

  • 1 sweet potato, diced

  • 1 red pepper, sliced

  • 1 yellow pepper, sliced

  • 1 head garlic, peeled

  • 2 tablespoons oil

Directions

Prepare the Roasted Vegetable Pizza

1.

In a large bowl, toss vegetables with oil and salt. Spread on a baking sheet.

2.

Roast at 400 degrees Fahrenheit for 25–30 minutes, until soft.

3.

Cut the pizza dough in half. Roll out each half into a round pizza crust.

4.

Spread sauce and cheese on dough. Top with roasted veggies.

5.

Bake at 350 degrees Fahrenheit for 10 minutes, until cheese is bubbling.
