Artichokes are high in vitamins and minerals, and they have the highest antioxidant content of any vegetable! Step away from the stove and roast these babies in the oven with your favorite spices. They are great as a side, in a salad, or even as a snack.

Ingredients

Roasted Artichoke Hearts

  • 2 (14-ounce) bags frozen artichoke hearts, defrosted

  • 4 to 5 cloves garlic, chopped

  • 1/2 teaspoon thyme

  • juice of 1 lemon (or about 3 tablespoons Heaven & Earth Lemon Juice)

Directions

Prepare the Roasted Artichoke Hearts

1.

Slice the artichokes and combine with the rest of the ingredients.

2.

Place in a baking dish and bake at 375 degrees convection for 30 minutes, mixing halfway through.
