This warm and cozy drink is not only delicious, but also super healthy and delightful. The oat milk allows this drink to absorb all the flavors without overpowering the overall taste. Feel free to increase the amount of coffee and sweetener to your liking.
3 and 3/4 cups oat milk, divided
1 to 2 tablespoons instant coffee (I like Taster’s Choice)
4 tablespoons canned pumpkin puree
1 teaspoon Gefen Vanilla Extract
1/2 tablespoon pumpkin spice
1/4 teaspoon Gefen Cinnamon, plus additional to garnish
pinch of salt
2 to 4 tablespoons Gefen Maple Syrup or honey
1 teaspoon almond or peanut butter (optional)
Using medium-low heat, pour three cups oat milk into a saucepan. Add the coffee and mix.
Once the liquid reaches a light simmer, add the pumpkin puree, spices, sweetener, and almond butter (if using), and whisk until everything dissolves.
Adjust sweetness to your preferences.
To foam, pour 3/4 cup oat milk into a large cup. Use a milk frother to whip the milk until rich and thick.
To assemble: pour pumpkin latte into nice mugs and add the foam on top. Sprinkle a touch of cinnamon to garnish.
