My father has been eating healthy for as long as I can remember. When riced cauliflower came to the stores, I was excited to experiment with it. It took some tries, as riced cauliflower does not have much of a taste on its own, but I eventually came up with this recipe. The taste is amazing and the bright color is beautiful 🙂
2 bags riced cauliflower
5 tablespoons diced fresh garlic
3 tablespoons olive oil
1/4 cup diced jalapeno peppers (small green)
1.5 tablespoons turmeric
1/4 cup panko crumbs
3 eggs
salt and pepper to taste (be sure to add enough salt as it brings out the flavor)
Preheat oven to 400 degrees Fahrenheit. Line 2 cookie sheets with parchment paper.
Sauté diced garlic and jalapeno in olive oil (careful, it will splatter).
Add defrosted bags of riced cauliflower.
Stir on medium heat for approximately 20 minutes.
Add turmeric, olive oil, salt and pepper.
Remove from flame.
When cooled, add eggs and panko crumbs.
Shape into burgers.
Bake until crisp, approximately 45 minutes.
