Rice noodles make a delicious dinner once they are paired with the perfect ingredients and spices. My idea was to give this dish a new twist by cooking the chicken using different spices.
1 chicken cut into 8 pieces
1 tablespoon salt
1 tablespoon pepper
1 tablespoon Gefen Paprika
1 tablespoon Gefen Garlic Powder
1 tablespoon Italian seasoning
1 package rice noodles
1 cup cooked broccoli
2 scallions, diced
fresh cilantro, to top
In a small bowl, combine the olive oil, salt, pepper, paprika, garlic powder and Italian seasoning. Rub this mixture over the chicken and cook in a preheated oven on 400 degrees Fahrenheit for one hour. Once the chicken is fully cooked, place it under the broiler for about five minutes.
Fill up a pot with water and bring to a boil with a pinch of salt. Add the noodles and boil for three minutes. Drain them and put aside.
Once the chicken is fully cooked, shred the pieces with a fork and pour over the sauce from the pan.
Mix the pulled chicken with the noodles and the broccoli. Add some cilantro on top and the scallions.
