1 cowboy steak
generous amount of Gefen Olive Oil
generous amount of kosher salt
generous amount of freshly cracked Gefen Black Pepper
Preheat grill to 250 degrees Fahrenheit.
Immediately before cooking the steak, rub generously with olive oil on all sides. Sprinkle a layer of kosher salt, pat in fully. Sprinkle a layer of black pepper, pat in fully.
Place steak over indirect heat and grill until it reaches an internal temperature of 115 degrees Fahrenheit. Remove from grill and let rest, covered.
During this time, the meat will continue to cook. Check the temperature every 10 minutes until it reaches 123-125 degrees Fahrenheit.
Bring up grill to highest heat and place steak over direct heat. Sear for two to three minutes on each side, until internal temperature reaches 132 degrees Fahrenheit for medium rare. (140 degrees Fahrenheit for medium – do not cook more than medium!)
Let rest for three to five minutes, uncovered.
Slice and serve! (Optional: sprinkle your favorite finishing salt before serving.)
