Crunchy, refreshing, and healthy, this delicious red cabbage relish is a great topping to any sandwich, or is perfect just on its own as a salad. This can stay in the fridge for approximately 2 weeks, so it can be used over and over again.
1/2 head red cabbage, shredded
1/2 head green cabbage, shredded
3 kirbies
1 green pepper, sliced
1 red pepper, sliced
1 onion, sliced
1 teaspoon salt
3/4 cup sugar
1 and 1/2 cups vinegar
1 and 1/2 cups water
1 teaspoon pickling spice
2 bay leaves
Combine vegetables and sprinkle salt and sugar. Allow to stand half an hour.
Bring water and vinegar to boil. Pour over vegetables. Transfer to glass jars.
Add spices wrapped in cloth. Close tightly, refrigerate several days. Discard pickling spice. It will keep well refrigerated for more than two weeks.
