Gluten free sticky date truffles are a welcome healthy addition to a sweet table or Passover snack repertoire. Yields about 25 truffles.

  • 1/4 cup unsweetened shredded coconut, for rolling

  • 25 almonds, optional

Directions

Prepare the Truffles

1.

Blend the dates, almonds & coconut chips in a food processor until a smooth paste is formed.

2.

Form medium size balls, shaping them with your hands. The natural oil the dates release will help them not stick to your hands and super easy to handle.

3.

Roll each ball into the unsweetened shredded coconut and optional top with an almond.

Tips:

If you find that the mixture is not coming together as you’d like and seems too dry, add the smallest splash of water and then continue to whir it up in the food processor. If you get fresh good dates (found in your produce aisle, you shouldn’t have this issue).

I love storing these (if you have any leftover) in an air tight container in the freezer, and grab as I need. So so so good! You MUST try these.
