How amazing is that to know that in one beautiful carrot ball like this you get so many vitamins and anti-inflammatory benefits?!
Carrots are loaded with beta-carotene and vitamin A. Ginger fights inflammation, full of powerful antioxidant and anti-inflammatory properties that can help the body in a variety of different ways.
So many benefits in one ball. This is the beauty of clean foods that are actually serving your body and doing you good!
These are filling, delicious, and decedent.
4–5 small to medium size carrots, peeled and grated very small
2 tablespoons orange zest + 2 oranges, squeezed
1/2 cup Gefen Honey
2 tablespoons grated ginger
1 cup shredded coconut
1 and 1/2 cups Gefen Almond Flour
1 cup water or plant milk such as Gefen Hazelnut Milk
1/2 cup walnuts or pecans, chopped (optional)
Place the grated carrots in a saucepan. Add the orange zest, orange juice, grated ginger, honey, and water and bring to a boil. Simmer until all the water evaporates, about 10 minutes.
Add the shredded coconut and almond flour and mix.
Place in the fridge for 30 minutes.
Form balls and coat with shredded coconut. These keep in the fridge for up to five days.

Delicious. Very sweet. Was worried about the quantity of ginger but it came out really good.
And yes this recipe give a lot of balls.
