Raw Carrot Coconut and Ginger Energy Balls for Passover

Ingredients

Raw Carrot Coconut and Ginger Energy Balls

  • 4–5 small to medium size carrots, peeled and grated very small

  • 2 tablespoons orange zest + 2 oranges, squeezed

  • 1/2 cup Gefen Honey

  • 2 tablespoons grated ginger

  • 1 cup shredded coconut

Directions

Prepare the Raw Carrot Coconut and Ginger Energy Balls

Place the grated carrots in a saucepan. Add the orange zest, orange juice, grated ginger, honey, and water and bring to a boil. Simmer until all the water evaporates, about 10 minutes.

Add the shredded coconut and almond flour and mix.

Place in the fridge for 30 minutes.

Form balls and coat with shredded coconut. These keep in the fridge for up to five days.

Notes:

  *This quantity is pretty big. So if you need only half of the amount, cut the recipe in half.

* If you wish more of a sticky texture, add about 5 mashed pitted dates.

* If you use spices, add some cinnamon, ginger, and pumpkin spice

* If needed, add more almond flour to adjust the texture to be stickier.

Delicious. Very sweet. Was worried about the quantity of ginger but it came out really good.
And yes this recipe give a lot of balls.
