When I made my first batch of these, they disappeared so quickly that I immediately made a second one.
Yield: 1 8-inch square pan
1/2 cup oil
1/4 cup sugar
1/4 cup brown sugar
1 teaspoon Gefen Vanilla Extract
1 and 1/2 cups Glicks Flour
1 and 1/2 cups quick-cooking oats
1/2 cup raspberry jam, such as Tuscanini Raspberry Fruit Spread
Preheat oven to 350 degrees Fahrenheit. Line an eight-inch square pan with Gefen Parchment Paper.
In a bowl, mix together all the ingredients except the jam until a nice crumble forms.
Press two-thirds of the crumbs into the pan. Smear jam on top, then sprinkle remaining crumbs over the jam.
Bake for 25–30 minutes.
Allow to cool before slicing.
