Quinoa is great healthy food choice. Its high fiber and protein content keeps you feeling full and satisfied. This recipe adds a sweet flavor and crunch that make it a real winner.
1 cup Pereg Quinoa
2 cups water
1/4 cup oil
2 teaspoons Tuscanini Lemon Juice
salt, to taste
pepper, to taste
1 can Gefen Mandarin Oranges (broken segments)
seeds of 1 pomegranate
1/2 cup slivered almonds
Place the quinoa and water in a pot. Bring to a boil over high heat. Reduce to a simmer, cover, and cook for about 15 minutes or until liquid is absorbed.
Transfer cooked quinoa to a bowl and add oil, lemon juice, salt and pepper. Mix in oranges and pomegranate seeds. Top with almonds right before serving.
Can be served warm or cold.
