Quince are in season, and add a delicious dimension to applesauce. This five-minute dish is the perfect accompaniment to fried latkes, or the finale to a heavy meal.
4 quinces
2 ripe pears
2 eating apples ( such as McIntosh)
2 cooking apples (such as Cortland)
2 tablespoons vanilla sugar
Preheat oven to 350 degrees Fahrenheit. Peel and quarter all the fruit.
Place in a Pyrex dish, sprinkle with vanilla sugar and cover tightly with foil. Bake for one hour.
Mash with the back of a fork, or for finer consistency blend with immersion blender.

Easy (but not five-minute easy, let’s be real) and delicious! The only change I had to make was to bake for about double the amount of time.
