This one-pot meal comes together in under an hour. It’s a perfect comforting dish for cold weather, and very kid friendly.

Ingredients

Quick Chicken Dumpling Soup

  • 4 skinless boneless chicken breasts

  • 4 cups chicken broth

  • 2 cups water

  • 1 can Gefen Peas & Carrots, drained

Directions

1.

In a large pot, bring the broth and water to a boil. Lower to a simmer and add in the chicken breast. Cover and cook 30 to 40 minutes or until the chicken is soft enough to shred.

Remove the chicken breast and shred.

Return to the pot.

Add in the cans of peas and carrots and sliced potatoes. Continue to cook on a simmer.

Add the flour to a separate bowl. Pour in one to two ladles of the hot broth and mix till smooth. Add that flour mixture back into the pot and mix to thicken.

Roll each wonton wrapper into a ball in the palm of your hand and put into the hot broth. Cover and allow to cook on a low simmer for 20 minutes or until the wontons are soft.

Notes:

Chicken broth is usually salty, therefore you won’t need more salt. If you find the final dish needs some salt, feel free to add to taste.

Cook the chicken, water, broth and vegetables in the crockpot on low for eight hours or high for four. Thirty minutes before the time is up, remove the chicken and shred, then add back to the pot. Add in the flour mixture and the wontons. Cover and let cook another 30 minutes or until it’s thickened and wontons are soft.
