1 cup prepared jasmine rice
5 ounce container arugula
1/2 cup chopped red onion (optional)
1/3 cup pomegranate seeds
2 cups pulled beef
1 tablespoon dijon mustard
1 tablespoon Gefen Honey
1/4 cup Tuscanini Balsamic Vinegar
1/2 teaspoon salt
1/4 teaspoon Gefen Black Pepper
1/3 cup Gefen Extra-Virgin Olive Oil
Shake together vinaigrette components in a mason jar or cruet.
Combine rice, arugula, onion, pomegranate, and pulled beef in a large bowl. Pour vinaigrette dressing over just before serving.
