Power Bowl Loaded Salad

Ingredients

Quinoa

  • 1 cup quinoa

  • 1 and 3/4 cups water

  • 1/2 tablespoon oil

  • 1/4 teaspoon salt

Salad

  • 6 ounces spring greens or romaine lettuce

  • roasted sweet potato (see below)

  • 1/2 cup cooked quinoa (see below)

  • handful sunflower seeds

  • handful pomegranate arils or raisins

Roasted Sweet Potatoes

  • 1 small sweet potato, diced

  • 1 onion, diced

  • oil spray

  • salt

Olive-Lemon-Pepper Dressing

  • 1/3 cup oil

  • 2 tablespoons lemon juice

  • 1/2 teaspoon pepper

  • pinch salt

Directions

Prepare the Power Bowl Loaded Salad

1.

Preheat oven to 400 degrees Fahrenheit.

2.

Place all quinoa ingredients in a 9×13 pan and bake covered 30 minutes or until all water is absorbed.

3.

Place all sweet potato ingredients in 9×13 pan and bake uncovered 45 minutes or until crispy.

4.

Mix dressing ingredients. Toss salad with desired amount of dressing.
