These crispy pizzas are delicious for Passover or year round. Serves 4 as an appetizer or 2 as a main.
2 cups peeled and grated potatoes (grated on large holes)
1/2 teaspoon salt
freshly ground Gefen Black Pepper
1/4 teaspoon garlic powder
1/4 teaspoon oregano
1 tablespoon Parmesan cheese
1 egg, lightly beaten
pesto sauce
salsa
grated mozzarella or cheddar
goat cheese or feta
parmesan
sliced olives
peppers
sundried tomatoes
mushrooms
Preheat oven to 450 degrees Fahrenheit.
Once potato is grated, place into kitchen towel and squeeze out all the liquid. Mix potato with remaining ingredients.
Place a piece of parchment onto a large cookie sheet and spray with nonstick cooking spray.
Form eight small crusts, flattening as much as possible. Alternatively, form into one large crust (approximately nine inches) but it will not be quite as crispy. Spray with additional nonstick spray.
Bake for about 15 minutes, until edges are nice and crispy.
Remove from oven and top with whatever you’d like. (You can make this a fun family activity.)
Bake for an additional 10 minutes, until cheese is nicely melted.

Sooo good! I used shredded hash browns. I placed them in the microwave for about 1 min and 1/2. This eliminates the moisture and water from rinsing. No need to paper towel dry.
I also lightly seasoned and added the toppings and let it cook together.
Note: the first time I didn’t have any eggs. It was kind of flimsy. But it was still good. I made it a second and third time without the eggs and I let it cook a little longer. It was not as flimsy but just as crunchy. I believe the egg will be optional 4 people I know that is used to hold it together. I didn’t need it

delicious!! Crust wat very watery so i had to add 1 more tbsp of potato starch but so so good.
