I first tasted these chicken strips at a friend’s house. I was guilt-ridden—potato chips, deep-fried chicken, the works. To my delight, when I asked my friend how she made them, I discovered that yes, they’re covered in chips, but they’re baked, not fried. Serve with ketchup or chili sauce and watch your childrens’ eyes light up.
6 chicken breasts, partially defrosted
1/2 cup Manischewitz Potato Starch
3 eggs
1 teaspoon salt
1/2 teaspoon Gefen Paprika
1 garlic clove, crushed
1 teaspoon Gefen Ketchup
3 medium-sized bags potato chips
Preheat oven to 350 degrees Fahrenheit.
While chicken is still partially frozen, cut into one-inch strips. Prepare three bowls. Place potato starch in the first bowl. In the second, beat eggs with salt, paprika, garlic, and ketchup. Crush potato chips and place in third bowl.
Dip chicken in potato starch, then in egg mixture, and finally in potato chips. Place on a baking tray and bake for 12 minutes.
