This veggie side dish with creamy cooked potatoes and zucchini is nutritious and simple to put together.
1 clove garlic, crushed or 1 cube Gefen Frozen Garlic
4 tablespoons oil
1 medium onion, diced
1/2 teaspoon paprika
dash of pepper (optional)
3 large potatoes, peeled and cubed
1/2 teaspoon salt
3 medium zucchini, peeled and cubed
Sauté onion in oil until transparent. Add all remaining ingredients.
Cover and cook over medium heat, stirring frequently for 30 minutes or until potatoes are tender.
