This fun-filled, Purim-inspired dressing is delicious with many things, such as salads, spinach leaves, and even cooked potatoes!
1/2 cup oil, such as Gefen Canola Oil
1/4 cup brown sugar
5 tablespoons vinegar
2 tablespoons chopped green onions
1/2 teaspoon salt
1/2 teaspoon ground mustard
2 teaspoons poppy seeds
pinch of tarragon
Place everything into a jar or bowl and mix well.
Serve over salad, over roast potatoes, or even over cooked beets and sliced red onions.
