A delicious and beautiful combination of fruits and vegetables with a hint of Rosh Hashanah mixed in.
24 ounces (680 grams) salad greens
pomegranate arils
1 pink grapefruit, sectioned
6–8 dried apple rings, cut up
1 avocado, cubed (optional)
1 small red onion, diced
1/2 cup Gefen Mayonnaise
1/4 cup Heaven & Earth Pomegranate Juice
2 tablespoons vinegar
1/4 cup sugar
1 tablespoon poppy seeds
1/2 teaspoon salt
Place dressing ingredients in a container and mix well.
To assemble: Place lettuce in a large serving bowl. Arrange fruits and vegetables on top. Drizzle dressing over all.
Alternatively, mix dressing with the lettuce before arranging the fruits and vegetables on top.
