Pom-Mango Salad

Ingredients

Salad

  • 1 sweet potato, cubed

  • 2 tablespoons oil

  • 1 teaspoon salt

  • 8 ounces iceberg lettuce

Dressing

  • 2 tablespoons sugar

  • 1 tablespoon hot water, plus 2 tablespoons room temperature water

  • 2 tablespoons oil

  • 1/2 tablespoon Tuscanini Balsamic Vinegar

Directions

Prepare the Roasted Sweet Potatoes

1.

Combine sweet potato with oil and salt. Place on a baking sheet and roast at 400 degrees Fahrenheit for 30 minutes.

Prepare the Salad

1.

Place salad ingredients in a large bowl.

2.

Dissolve sugar in hot water. Mix with the rest of the dressing ingredients. Pour over salad.

This was an easy salad to make and was swiftly polished back by my guests, who exclaimed how much they liked it and went back for seconds.
