Take advantage of the season and use up those plums in this special plum pie recipe. Note that this is a simcha recipe and yields a large amount.
10 cups Mishpacha Flour
1 and 1/2 cups sugar
9 egg yolks
rind of 2 lemons, grated
1 and 1/2 pounds margarine
3 teaspoons Haddar Baking Powder
2 and 1/4 cups orange juice
8 pounds (approximately 40) medium plums, washed pitted and coarsely chopped
2 cups Gefen Confectioners’ Sugar
2 teaspoons Gefen Vanilla Sugar
Combine all ingredients and knead to form soft dough. Refrigerate for two hours.
Divide dough into four parts.
Roll out two parts and place on two 11- by 17-inch cookie sheets. Prick and pre-bake for 15 minutes.
Combine plums with sugars and spread over pre-baked doughs in cookie sheets.
Roll out rest of dough. Cut into half-inch strips and do lattice work over plums.
Bake at 350 degrees Fahrenheit for one hour. Cut into two-inch squares.
