The fresh plum and basil relish makes this salmon perfect for summer!
4 medium plums, pitted and cubed
1 tablespoon Tuscanini Extra-Virgin Olive Oil
1 tablespoon Heaven & Earth Lime Juice
3 teaspoons dried basil
3 teaspoons Gefen Maple Syrup
salt, to taste
lemon pepper, to taste
8 salmon fillets, cubed
Preheat oven to 350 degrees Fahrenheit.
Toss plums with oil, lime juice, basil, and maple syrup in a medium bowl and season with salt and lemon pepper. Set aside.
Season salmon with salt and pepper and cook for 10 minutes, or until salmon is cooked through. Serve warm with plum relish.
