This delicious, homey soup is a meal in one.
1–2 tablespoons oil
2 onions, diced
2 stalks celery, diced
2 zucchini, diced
2 carrots, sliced thinly
1 jar thick marinara or pizza sauce
1 can beans (pink or black beans work best)
2 cloves garlic
1/4 teaspoon basil
1/4 teaspoon oregano
1 tablespoon salt
2 tablespoons Haddar Brown Sugar
water, to cover
1 cup small pasta such as Gefen Orzo or ditalini
shredded cheese, for sprinkling
In a large pot, heat oil and sauté onions and celery for 10 minutes.
Add the rest of the ingredients except pasta and cheese and bring to a boil.
Simmer for two hours.
Add pasta and cook for an additional 10 minutes, stirring occasionally to prevent burning.
Add cheese and serve.
