vegetable tomato sauce
1 baby eggplant, cubed
4-5 bone in chicken legs
salt
pepper
garlic
paprika
cumin
for sprinkling
1 zucchini, cubed
1 small red pepper, cubed
2 onions, halved and cubed
2/3 cup cherry tomatoes
sauce:
425 gr can tomato sauce
1/3 cup chicken broth
3 cubes garlic
1/2 tsp parsley flakes
1 tsp oregano
2 tbsp onion soup mix
1/4 cup honey or sugar plus more honey for drizzling
1 tbsp lemon juice
preheat oven to 190
sprinkle eggplant cubes with salt and let sit for 1/2 hour. pad dry.
place chicken on a pan chicken on a pan.
arrange all the vegetables around the chicken.
whisk sauce ingredients together.
pour on chicken and vegetables.
drizzle some extra honey.
bake for 1 1/2hor. base chicken if necessary.
