I love walking through the grocery aisles and getting inspiration from the ingredients I see. I recently spotted ready-made pesto, and it got me thinking — how can I incorporate this into dinner without using pasta? I came up with this recipe, and we’ve enjoyed it ever since!
4 slices salmon
6 tablespoons Gefen Mayonnaise
3 tablespoons Ta’amti Pesto
1/2 cup Gefen Panko Crumbs
1/2 cup Gefen Ground Almonds
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon dried parsley
Combine mayonnaise and pesto in a bowl. Add salmon and coat evenly with the mixture. Let sit and marinate in the refrigerator for 30 minutes.
Preheat oven to 400 degrees Fahrenheit. Combine the crumb topping ingredients in a small bowl. Place marinated salmon in a 9×13-inch pan and top with the crumbs, pressing down gently. Spray with cooking spray and bake in preheated oven for 20 to 25 minutes, until salmon is done.
