Heads up, feel free to use your own recipe for the latke batter or pancake batter- the best part of this recipe is the construct of different elements that, combined, create something dynamite!!

4 potatoes
1 onion
2 eggs
2 tablespoons flour
salt
pepper
oil, for frying
eggs
maple syrup
grated parmesan
chopped scallions
Yitzy’s pancake and waffle batter
Grate onions and potatoes and mix with eggs, flour, salt, and pepper. In a hot frying pan, add oil and fry latke batter, 3/4 cup of batter per latke. Set aside when finished.
Using a ready-made pancake and waffle batter or your favorite pancake recipe, preheat waffle maker according to package instructions, pour in batter and cook until waffle has set. Set aside.
Using more of the pancake batter, heat a frying pan with nonstick cooking spray and pour 1/2 cup batter per pancake. Flip when side down has set and remove when done.
In the same frying pan gently pour an egg and let it cook until white part is fully cooked and has a nice crust. Remove and set aside.
In the same frying pan put a pancake on over low flame. Drizzle with maple syrup and sprinkle Parmesan. The Parmesan will begin to pop- that’s a good sign your pan is hot enough. Next place a latke on top and again drizzle with maple syrup and Parmesan. Next place 1/4 of a full waffle and drizzle the maple syrup and sprinkle Parmesan. Top with another latke, maple syrup and Parmesan. Next goes another pancake and again sprinkled and drizzled with Parmesan and maple syrup. Finally add the sunny side up egg and again maple syrup and Parmesan. By this time, the bottom pancake should have developed a really nice caramelized crust from the maple syrup. Remove with a spatula. Feel free to drizzle more maple syrup on top and add some chopped scallions to the top!!
