An easy, hearty Italian style dish perfect for any night of the week.
1 tablespoon Bartenura Olive Oil
1 medium onion, chopped
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
10 ounces Italian sausage
1/2 cup Alfasi Cabernet Sauvignon or other red wine
1 medium carrot, grated
1 (15-ounce) can diced tomatoes
1/8 teaspoon crushed red pepper flakes (omit if you are using spicy sausage)
1/3 cup Gefen Non-Dairy Whipped Topping or soy milk
1 pound penne pasta, prepared according to package instructions
Heat oil in sauté pan over medium heat. Add onion and garlic, cook until onion is translucent.
Remove the thick plastic casing around the sausage. Then either slice the sausage or crumble it into the pan. Brown the sausage.
Add red wine, carrots, diced tomatoes, and crushed red pepper. Cover and simmer for 15 minutes.
Add the liquid whipped topping and cook for an additional two to three minutes.
Stir in pasta and cook until pasta is warm. Cover and remove from heat. Let sit for five minutes before serving.
