This super soft and moist cake is a crowd pleaser; it’s not uncommon to see guests going back for seconds. It’s a piece of heaven on a plate, if I may say so myself!
2 cups Gefen Almond Flour
1 tablespoon Haddar Baking Powder
3/4 cup vegan yogurt (standard Greek yogurt can be used for non-vegans)
1/2 cup Gefen Applesauce
1/3 cup stevia or granulated sweetener of choice
1/3 cup melted coconut oil
1/2 cup pecans
candied pecans or pecan pie filling for topping, optional
Add the yogurt, applesauce, sugar, and coconut oil to a bowl, and mix well.
Once there are no clumps left over, add the almond flour and baking powder and give it a final mix.
Fold in the pecans.
Transfer to a loaf pan and bake for one hour.
Remove from oven, let it cool off for one hour, decorate, slice, and enjoy!
Preheat oven to 350 degrees Fahrenheit.
